Clairin Sonson
Clairin Sonson comes from the village of Cabaret, a municipality in the Arcahaie district, northwest of Port-au-Prince.
Stephan Kalil Saoud cultivates the local sugarcane variety Madame Meuze on his 25-hectare farm, where the sugarcane is grown alongside banana and other fruit trees. After harvest, the sugarcane is pressed and slowly reduced to syrup, after which it is naturally fermented using the yeast found in the distillery and the fields.
Distillation takes place in pot stills, created by his father, who founded the distillery in 1932.
Clairin Sonson has distinctly spicy notes of lemongrass and basil in a distinctive yet approachable flavor.
