Clairin Le Rocher
Clairin Le Rocher is produced by Bethel Romelus in Pignon from sugarcane syrup.
The syrup is made from sap that has been boiled to preserve it and maintain the characteristic properties of the raw material. Three different sugarcane varieties are used to produce the syrup, which then undergoes a fermentation process similar to the tradition of Grand Arôme. In this process, the residue remaining in the pot after distillation (often called dunder, backset, or stillage) is returned to the fermenting wash.
This addition allows for the development of much more intense aromas during fermentation, which are then also expressed in the final spirit. Le Rocher is characterized by a full, rich flavor and an intriguing smoky sweetness. Le Rocher is depicted in a painting on the walls of the famous Hotel Florita in Jacmel, Haiti.
